For the Chicken
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 small red bell pepper, cut into chunks
- 1 small green bell pepper, cut into chunks

- Sesame seeds and sliced green onions, for garnish
Cooking Instructions
- Prepare the Chicken: Season the chicken pieces with salt and pepper. Dredge them in cornstarch, then dip in the beaten eggs.
- Fry the Chicken: Heat vegetable oil in a skillet over medium heat. Fry the chicken in batches until golden and crispy, about 4-5 minutes per side. Drain on paper towels and set aside.
- Make the Sauce: In a small saucepan, combine the rice vinegar, ketchup, soy sauce, and sugar. Bring to a simmer over medium heat, stirring occasionally. Stir in the cornstarch slurry to thicken the sauce. Cook for an additional 2-3 minutes until thick and glossy.
- Stir-Fry the Vegetables: In a large skillet or wok, heat 1 tablespoon of oil. Add the garlic and ginger, sauté for 30 seconds. Add the bell peppers and stir-fry for 2-3 minutes until slightly tender.
- Combine: Add the pineapple chunks and fried chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the mixture and toss everything to coat evenly.
- Serve: Remove from heat, garnish with sesame seeds and sliced green onions. Serve with steamed white rice or your favorite side.
