Ingredients:
- 4 large bell peppers, any color
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese
Cooking Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef until browned. Add the diced onion and garlic, cooking until softened.
- Stir in the cooked rice, diced tomatoes, oregano, paprika, salt, and pepper. Cook for a few more minutes.
- Spoon the beef mixture into the bell peppers and place them in a baking dish.
- Top each stuffed pepper with shredded cheese.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Serve hot and enjoy!
