Sauteed Green Beans with Almonds

Crisp green beans are sautéed with garlic and topped with toasted almonds for a flavorful and crunchy side dish. This easy recipe is perfect for complementing any main course.

Ingredients:


  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup sliced almonds, toasted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley, for garnish

Cooking Instructions


  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and transfer to an ice bath to stop the cooking process. Drain again and pat dry.
  2. Toast the Almonds: In a dry skillet, toast the sliced almonds over medium heat for 2-3 minutes until golden and fragrant. Remove and set aside.
  3. Sauté the Green Beans: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the blanched green beans, salt, and black pepper, and cook for 5-7 minutes, stirring occasionally.
  4. Finish with Almonds and Lemon: Stir in the lemon juice and toasted almonds, tossing to combine. Remove from heat and garnish with fresh parsley.
  5. Serve: Serve warm as a healthy side dish alongside your favorite main course.
