Cooking Instructions
- In a bowl, combine olive oil, lemon juice, dill, basil, parsley, garlic powder, salt, and pepper. Add shrimp and toss to coat. Let marinate for 10 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes per side or until opaque and cooked through. Remove from heat.
- In a small bowl, mix mayonnaise, Dijon mustard, and honey. Spread this mixture on one side of each bread slice.
- Layer avocado slices, grilled shrimp, mixed greens, and capers on four bread slices. Top with remaining bread slices to form sandwiches.
