Classic Meatloaf

This classic meatloaf recipe is hearty, flavorful, and perfect for a comforting family dinner. With a delicious glaze and tender texture, it's sure to be a hit at your dinner table.

Ingredients


  • 2 pounds ground beef (80/20 blend)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Cooking Instructions


  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, Dijon mustard, thyme, salt, black pepper, and smoked paprika.
  3. Mix the ingredients together gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
  4. Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
  5. In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
  6. Brush half of the glaze over the top of the meatloaf.
  7. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  8. About 10 minutes before the meatloaf is done, brush the remaining glaze on top and continue baking.
  9. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  10. Serve with mashed potatoes, roasted vegetables, or your favorite sides.
