- 2 pounds ground beef (80/20 blend)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup whole milk
- 2 large eggs
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Cooking Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, Dijon mustard, thyme, salt, black pepper, and smoked paprika.
- Mix the ingredients together gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
- Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
- In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
- Brush half of the glaze over the top of the meatloaf.
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
- About 10 minutes before the meatloaf is done, brush the remaining glaze on top and continue baking.
- Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
- Serve with mashed potatoes, roasted vegetables, or your favorite sides.
