Classic Apple Pie

This classic apple pie recipe features a buttery, flaky crust filled with sweet, tart apples and warm spices. Perfect for serving with a scoop of vanilla ice cream!

Ingredients


For the Crust

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cut into cubes
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6-8 tablespoons ice water

For the Filling

  • 6-7 medium Granny Smith apples, peeled, cored, and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter, cut into small pieces

For the Topping (Optional)

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Baking Instructions


  1. Prepare the Crust: In a large bowl, combine the flour, salt, and sugar. Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Slowly add the ice water, 1 tablespoon at a time, until the dough starts to come together. Divide the dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the Filling: In a large bowl, mix the sliced apples with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, allspice, and salt. Let sit for 15 minutes to allow the apples to release some juices.
  3. Roll Out the Dough: On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim the edges, leaving a slight overhang. Roll out the second disk for the top crust.
  4. Assemble the Pie: Preheat the oven to 425°F (220°C). Pour the apple filling into the prepared pie crust. Dot with butter. Cover with the second dough disk, trim excess dough, and crimp the edges to seal. Cut a few slits on top for steam to escape.
  5. Add the Egg Wash: Brush the top crust with the beaten egg and sprinkle with coarse sugar, if desired.
  6. Bake: Bake at 425°F (220°C) for 15 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for 45 minutes to 1 hour, until the crust is golden brown and the filling is bubbling.
  7. Cool and Serve: Allow the pie to cool for at least 2 hours before slicing. Serve with a scoop of vanilla ice cream if desired.
